2 Bean Corn Chili
Here's another recipe from the Rival Cookbook. Rival slow cooker was originally called Naxon Beanery pot , then Rival bought the it...The slow cooker was introduced in 1971 in Kansas City ,Missouri and was geared toward the working woman.
This is what is needed to make this:
a slow cooker
1 can ( 16 oz) black eyed peas
1 can ( 16 oz ) Navy beans
1/2 cup tomato paste
1 cup water
2 teaspoons chili powder
1/2 teaspoon ground cumin
1/4 teaspoon dried oregano
1 teaspoon prepared Mustard
1 cup fresh or frozen or canned corn'
1/2 cup scallions
1/4 cup diced canned jalapenos peppers
1 cup diced tomatoes
I added about 1/2 pound ground sausage ( in which was browned before adding to crock pot)and instead of the water I used turkey broth that I had canned.
Combine above ingredients in crock-pot . Cover and cook on low 8- 10 hours or on high for 4 - 5 hours.
