Upside Down Peach Muffins

  Here's another recipe from this Cookbook , published in

                                        I just love these type of cookbooks!


                                              Upside- Down Peach Muffins

2 cups all-purpose flour                                                     1 cup milk
1 1/2 cup sugar                                                                   6 Tablespoons butter or margarine
1 Tablespoon baking powder                                             1 cup plus 2 Tablespoon packed
1/2 teaspoon salt                                                                      brown sugar
1/4 cup shortening, melted                                                3 cups sliced, peeled ripe peaches
                                     2 eggs, slightly beaten

In a mixing bowl, combine flour, sugar, baking powder, and salt. Add shortening, eggs, milk; mix until smooth. In the bottom of 27 greased muffin cups, place 1 teaspoon butter and 1 Tablespoon brown sugar. Place in 375 degree oven for 5 minutes. Arrange peaches in the muffin cups. Fill with batter . Bake at 375 degrees for 25 minutes or until browned. Turn out of pan immediately. This makes 27 muffins

Instead of the sliced peaches I used my peach puree, or sauce...these are delicious..
