CHICKEN AND TINY BISCUITS

Biscuit

1 cup sifted flour

1 1/2 teaspoon baking powder

1/8 teaspoon soda

1/8 teaspoon salt

3 Tablespoon shortening

6 Tablespoon sour milk

  Sift dry ingredients together ; cut in shortening. Add milk; lightly mix. Knead gently for 30 seconds. Roll out to 1/2 inch thick; cut with a tiny biscuit cutter.

1 1/2 Tablespoon butter

2 Tablespoon flour

1 cup broth

1/4 cup milk

Salt and pepper to taste

1 1/2 cup cooked chicken

1/2 cup rice, cooked

    Melt butter ; blend in flour. Gradually add broth and milk ; cook until thickened. Season to taste. Place chicken and rice in casserole ; add sauce. Cover with biscuits. Bake at 400 F. degrees for 25- 30 minutes.

YIELD: 4 Servings
