CHICKEN CASSEROLE

1 ( 4 to 4 1/2 pound ) stewing chicken

9 slices day old bread

 3 cup chicken broth

1/2 cup rice

1/2 cup parsley, chopped

 1/2 cup pimento , chopped

2 teaspoon salt

4 eggs, well beaten

  Cook chicken until tender ; cool and cut into cubes. Soak bread in broth for several minutes. Add all ingredients. Bake at 325 F. degrees for 1 hour or until firm. Serve with mushroom sauce.

YIELD :  10 Servings
