FAVORITE TURKEY SCALLOP

1 cup celery, diced'1/2 cup water

1/2 butter, melted

2 1/2 cup toasted bread cubes

Milk

1/4 cup flour

1/4 teaspoon poultry seasoning

1/8 teaspoon pepper

1/2 teaspoon salt

1 cup turkey, diced

   Cook celery in water until tender. Pour 1/4 cup butter over toasted cubes. Combine celery liquid with enough milk to make 2 cups. Gradually stir flour and milk mixture into remaining butter; stir constantly until thickened. Add seasonings. Place half of bread cubes in a 1 1/2 quart casserole; add turkey and celery. Top with remaining bread cubes. Pour sauce over bread ; bake at 350 F. degrees 20-30 minutes or until thoroughly heated. Garnish with parsley.

YIELD: 4 Servings.
