JAMBALYA

1 1/2 cup cooked chicken, diced

1 cup cooked rice

2 cup canned tomatoes

1 large onion, chopped

1/2 green pepper, chopped

2 stalks of celery, chopped

 4 Tablespoon butter

Salt and pepper to taste

1/2 cup buttered bread crumbs

  Mix chicken, rice and tomatoes ; cook for 10 minutes. Saute onion, green pepper and celery in butter ; add to chicken mixture. Season to taste. Pour into buttered 1 1/2 quart casserole; cover with buttered crumbs. Bake uncovered at 350 F. Degrees 1 hour. NOTE: Ham or veal may be substituted for chicken.

YIELD: 6-8 Servings
