MOCK CHICKEN-ALMOND

2 pound sausage

2 large onions

1 bell pepper

1 bunch celery

2 cup raw brown rice

9 cup water

2 cans bouillon cubes

1/2 pound blanched almonds, chopped

   Brown sausage , onions and pepper lightly; add celery and rice. Bring water to boil; add bouillon cubes. Combine all ingredients. Bake for 1 hour at 375 F. degrees in a greased covered casserole.

YIELD: 16 Servings
