MOCK CHICKEN CASSEROLE

1 pound sausage
2 package dry chicken-noodle soup mix
1 cup rice
5 cup boiling water
1 can cream of mushrooms soup
1 1/2 cup celery, diced
1/4 cup green pepper, chopped
1/2 teaspoon salt
Pepper to taste
   Brown and drain sausage; add all remaining ingredients. Simmer 40 minutes or until rice and celery are thoroughly cooked.
YIELD: 8 Servings
