QUICK TAMALE

3/4 - 1 pound ground beef'

3/4 cup onion, chopped

Salt to taste

1/8 teaspoon pepper

1-2 teaspoon chili powder

3 Tablespoon salad oil

1 ( 12 oz) can Whole-kernel corn

1 No. 2 can cooked tomatoes

1 box corn muffin mix

   Cook beef, onion and seasonings in hot oil for 8-10 minutes, stirring until crumbly. Add corn and tomatoes ; bring  to a boil. Pour into 3 x 9 x 2 -inch pan. Prepare corn muffin mix according to directions on package. Spoon batter over meat mixture. Bake at 400 F. degrees for 30-40 minutes.

 YIELD: 7-8 Servings

Tuna Bake

Come with me to the year 1967, in the Great state of Kansas. When physical newspapers were a thing ( no internet). When basically almost all meals were cooked from scratch, there was some meal convenience foods...in which this recipe does use...casseroles were a thing as well...now on to the recipe ( sorry no photos due to tech issues)  What do you need for this recipe 1 package of Macaroni and cheese 3 Tablespoons  of soft Butter 1 cup tomatoes ( can use canned drained               Some) 1/2 milk 2 Tablespoons onion, minced 1 egg 1 can Tuna, drained 2 Tablespoons  Parsley,  snipped ( can         Use dried) 1/2 teaspoon  salt 2 Tablespoons  corn flake crumbs       ( can use more for top) A saucepan to mac n cheese 1 quart casserole dish  Oven Cook Macaroni and cheese as package directs, then add other ingredients.
