SARAH'S CHICKEN CASSEROLE

1 chicken, cubed

1/2 cup butter

6 sprigs parsley

2 stalks celery

1 onion

1 cup fat

4 cup broth

1 cup milk

1 cup flour

4 eggs, slightly beaten

1 teaspoon salt

1/8 teaspoon pepper

1 teaspoon poultry seasoning

1 1/2 loaves bread, finely crumbled

  Cook chicken and cut in cubes. Cook butter, parsley, celery and onion until tender. Heat fat, broth and milk; thicken with flour. Add eggs and seasonings ; cook 3 minutes. Layer bread crumbs, chicken and sauce, ending with another layer of bread crumbs. Bake 20 minutes at 250 F. degrees.

YIELD:  8 Servings
