WHOLE CHICKEN CASSEROLE

1 1/2 cu uncooked rice

1 can mushroom soup

1 can celery soup

2 cans water

2 onions , diced

1 cup celery, coarsely chopped

1 teaspoon salt

1/2 teaspoon pepper

Mushrooms ( optional)

1 chicken , quartered

  Combine all ingredients except chicken in large casserole. Salt and pepper chicken quarters ; place on top of casserole. Cover and bake 1 hour at 325 F. degrees. Remove cover and bake 1 hour longer.

YIELD: 4 Servings
