CRAB- MUSHROOM CASSEROLE

2 cup cooked rice

1 1/2 cup fresh crab, flaked

3/4 cup mayonnaise

1 ( 2 oz) can sliced mushrooms

1 small green pepper, chopped

1 small onion, diced

1 cup tomato juice

Salt and pepper to taste

3/4 cup sharp cheese, grated

    Mix all ingredients except cheese ; pour mixture into greased 2-quart casserole. Sprinkle cheese on top. Bake for 1 hour at 350 F. degree oven . NOTE : For variation cracker crumbs or potato chips may be sprinkled over cheese.\

YIELD: 6 Servings
