HOT FRANKFURTER - POTATO SALAD

6 frankfurters, sliced

2 Tablespoon cooking oil

1 medium onion, chopped

4 cup cooked potatoes, sliced

1 large dill pickles, chopped

1 teaspoon capers ( optional)

1/4 cup vinegar

1 Tablespoon prepared mustard

1 teaspoon salt

1/8 teaspoon pepper

3 hard- cooked eggs, whites sliced

     Lightly brown frankfurters slices in hot oil. Remove frankfurters ; cook onion in the oil about 5 minutes, stirring occasionally. Add remaining ingredients except egg yolks. Stir salad lightly while heating it through. Grate the egg yolks and use as a golden garnish.

YIELD: 6 Servings
