SCALLOPED POTATOES AND HAM

3 Tablespoon fat

3 Tablespoon flour

1 teaspoon salt

1/2 teaspoon pepper

1 small onion, minced

1 Tablespoon parsley, minced

2 cup milk

4 large potatoes, boiled

1 can Spam, sliced

1 cup buttered bread crumbs

    Melt the fat; stir in flour. Add the salt and pepper. Add onion, parsley and milk. Cook, stirring until smooth and thickened. Slice the potatoes thin and place in layers in a casserole ; top with Spam slices. Pour on sauce ; sprinkle with bread crumbs. Bake at 375 F. degrees for 30 minutes.

YIELD: 6 Servings
