'TATER DOGS

8-10 frankfurters

1 package instant mashed potatoes flakes

1 1/2 cup boiling water

3 Tablespoon butter

3 Tablespoon onion, chopped

1 teaspoon parsley flakes

1/2 cup sour cream

Salt to taste

1 egg, beaten

1 1/2 cup potato chips or crumbs

    Heat frankfurters in boiling water ; drain. Prepare potato flakes by stirring into boiling water ;whip thoroughly. Melt butter ; add onion and parsley. Cook very slowly ; do not get too brown. Remove from heat and add sour cream, salt, mustard and egg. Add to the potatoes. Completely cover individual frankfurters with potato mixture ; roll in crushed potato chips or other crumbs. Bake in buttered dish for 25-30 minutes at 350 F. degrees. NOTE : This recipe won third prize in a national recipe contest for teachers .

YIELD: 8 Servings
