Lemon -Oat Streusel Squares

                             Lemon-Oat Streusel Squares

Crust and Streusel

3/4 cup butter or margarine, softened
1 1/4 cups packed brown sugar
2 cups all -purpose flour
1 1/2 cup rolled oats

FILLING

1 can ( 14 oz) sweetened condensed milk ( not evaporated milk)
2 teaspoons grated lemon peel
1/2 cup lemon juice
powdered sugar ( optional)

  Preheat oven to 350 degrees ( F). For crust, beat butter and sugar in large bowl until well blended. In Medium bowl, combine flour and oats. Add to butter mixture; mix until resembles coarse crumbs. Reserve 2 cups oat mixture for streusel topping; press remaining oat mixture onto bottom of greased 9-inch square baking pan. Set aside. For filling, combine all ingredients except powdered sugar in medium bowl; blend well. Pour filling over crust, sprinkle with reserved oat mixture. Press gently into filling. Bake 30-35 minutes or until golden brown .Cool completely before cutting into squares. Sprinkle with powdered sugar just before serving, if desired.
