BAKED CHICKEN

2 ( 2 to 2 1/2 pound) chicken , cut up'1 cup flour

1 1/2 Tablespoon salt

2 Tablespoon paprika

1/2 teaspoon pepper

3/4 cup butter

1 ( 7 oz) jar pitted ripe olives

1 cup orange juice

1 Tablespoon brown sugar

1/2 teaspoon thyme

1 medium onion, sliced in rings

   Combine flour, 1 Tablespoon salt, 1 teaspoon paprika and pepper in paper bag. Put chicken in bagand shake enough to coat each piece with mixture. Brown in 1/2 cup butter. Place browned chicken in a large flat casserole. Combine 1/4 cup butter, olives, orange juice, brown sugar, 1 teaspoon salt, thyme and onion rings.; simmer 4 minutes. Pour sauce over chicken. Sprinkle top of chicken with paprika. Bake 1 hour and 30 minutes to 1 hour and 45 minutes at 375 F. degrees or until tender. Baste 4-5 times during baking. Serve with hot rice.

YIELD :  4-6 Servings
