BAKED PHEASANTS

Submitted by Mrs. Don L. Pack from Nebraska

2-3 pheasants, cut in serving pieces

Pancake flour

Shortening

Salt and pepper

2-3 cup beer

   Rolls pheasant in flour; brown in hot shortening. Season to taste. Place in roaster; pour drippings over meat. Add beer ; cover. Bake at 300 F. degrees for 1 hour and 30 minutes. Increase temperature to 350 F and cook 1 hour and 30 minutes longer, basting every 30 minutes.

YIELD:  6 Servings
