Brand New Meat Ball Casserole

Brand New Meat Ball Casserole

2 pound ground chunk
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup onion, chopped
1/3 cup stuffed olives. chopped
2 eggs , slightly beaten
1/4 cup butter
2 Tablespoon flour
1/2 cup water
1 teaspoon lemon juice
1/2 teaspoon Worcestershire sauce
1/4 teaspoon paprika
1/2 teaspoon salt
1 cup sour cream
1 Tablespoon chopped parsley
Mix together beef, salt, pepper, onion, olives and eggs; shape into 24 meatballs. Melt butter; brown meatballs and place in shallow casserole. Pour off excess fat reserving 2 Tablespoons; blend in flour. Add water, lemon juice, Worcestershire sauce, paprika and salt; cook until thickened. Remove from heat; blend in sour cream. Pour over meatballs , bake 10-15 minutes at 350 F. Degrees. Garnish with chopped parsley.
Yield: 8 servings
