BREAST OF CHICKEN ALMONDINE

3 whole chicken breasts, cooked

1 can cream of chicken soup

1 cup celery, diced

 2 teaspoon onion, minced

1/2 cup slivered almonds

 1/2 teaspoon salt

1/4 teaspoon pepper

1 Tablespoon lemon juice

3/4 cup mayonnaise

Bread crumbs or crushed potato chips

   Remove chicken from bones. Mix all ingredients gently. Place in butted casserole ; top with bread crumbs or potato chips. Bake at 375 F. degrees for 30 minutes. Serve over cooked rice.

YIELD: 4-6 Servings
