CHICKEN CASSEROLE MEDLEY

1/4 cup butter
1 small onion, chopped
1 stalk celery, with top, chopped
Parsley
1/2 ;loaf day- old bread , crumbled
1 teaspoon salt
Dash of pepper
1 teaspoon poultry seasonings
4 cup plus 6 Tablespoon chicken broth
1/2 cup milk
1/2 cup chicken fat, melted
1/2 cup flour
2 eggs, slightly beaten
1 ( 3 pound ) chicken, cooked
Melt butter ; add onion, celery and parsley. Cook 6 minutes. Add to bread crumbs; add seasonings and 6 Tablespoons broth. Heat remaining brothand milk ; do not boil. Blend flour into fat ; stir into milk. Cook, stirring constantly , until thickened. Add eggs. Place dressing in a greased 13 x 9 x 2 - inch pan ; add half of sauce and cut up chicken. Cover with remaining sauce. Bake at 350 F. degrees for 45 minutes.
YIELD: 6 Servings
