CHICKEN SUPREME

2 cup cooked rice

2 2/3 cup chicken broth

4 cup cooked chicken, chopped

 1 large can mushrooms

2 Tablespoon butter

1 small can pimentos, finely chopped

1 cup blanched almonds, halved

1/2 cup flour

Buttered crumbs

  Combine rice and 2/3 cup broth ; mix well. Add chicken and place in a casserole. Saute mushrooms in butter. Place half of mushrooms, half of pimento and half of almonds on chicken mixture. Combine remaining broth and flour ; heat until thickened. Pour half of sauce over casserole. Repeat layers ; top with crumbs. Bake at 350 F. degrees for 45 minutes.

YIELD : 8-10 Servings
