CHOPS AND STUFFING LOAF

4 pork chops, 1/2 inch thick
salt and pepper
1 1/2 cup bread crumbs
1 teaspoon poultry seasoning
3/4 cup unpared apples, chopped
1/2 cup seedless raisins
1/4 cup celery, chopped
1 cup onion , chopped
Trim fat from chops; salt and pepper chops. Combine remaining ingredients, adding just enough water to moisten .Stand chops on edge, fat side up in center of foil. Run skewer through chops, sp[acing them 1/2 -inch apart. Spoon stuffing loosely between chops. Fold foil over and seal. Bake at 450 F. degrees for 1 hour and 30 minutes.
YIELD: 4 servings
