FAMILY STYLE MEXICAN TAMALE

3 cup cooked yellow corn meal mush

2 Tablespoon fat

1/3 cup onion, chopped

1/3 cup green pepper, chopped

1 pound ground beef

2 cup tomatoes, chopped

1 teaspoon salt

1/4 teaspoon pepper

1/4-1/2 teaspoon chili powder

   Line bottom and sides of a 2-quart casserole with mush in a 1- inch layer. Set aside to cool. Saute onion and green pepper in fat. Push to one side and add meat. Brown well, stirring occasionally. Add tomatoes and seasonings, simmer 25-30 minutes. Pour into casserole; top with a layer of corn meal mush. Bake at 350 F. degrees for 30 minutes or until crust is golden brown.

YIELD:  6 Servings
