 I think this cookbook is a casserole cookbook of the Home Economics...I have glanced or rather thumbed thru it...lots of casseroles.

LAMB-APPLE CASSEROLES

 Submitted by Mrs. Carolyn R. Stuckum from Michigan

1 pound lamb shoulder, diced

Salt and Pepper

1 Tablespoon salad oil

2 cup tart apples, sliced

1 teaspoon lemon rind, grated

3 whole cloves

2 Tablespoon water

1/3 cup bread crumbs

1/4 cup brown sugar

   Season meat with salt and pepper. Brown on all sides in hot oil. Transfer eat to shallow casserole. Add apples, lemon rind, cloves and water. Sprinkle with crumbs and brown sugar. cover and bake at 350 F. degrees for 30 minutes. Uncover and bake 15 minutes longer or until browned. 

YIELD: 4 Servings
