MARGERY'S CHICKEN-NOODLE CASSEROLE

2 large chicken breast, split

1 onion, sliced

8 stalks celery, chopped

Salt and pepper to taste

3.4 cup chicken fat

3/4 cup flour

1 cup milk

1 small green pepper, finely diced

1 ( 6 oz) package egg noodles, cooked

1 ( 4 oz) jar pimentos, sliced

1 ( 8 oz) can mushrooms

1./2 cup toasted almonds

  Cook chicken breasts with sliced onions and celery until tender. Season to taste ; strain broth and cool. Bone meat and cut into 1-inch cubes. Simmer bones, onion and celery in 2 cups cold water for 1 hour ; strain and add to broth. Refrigerate chicken and broth. Melt fat ; add flour, mixing well. Add broth and milk. Heat to a rolling boil , stirring constantly ; add green pepper and cool. Combine all ingredients in a large baking pan ; mix well. Cover with buttered crumbs ,if desired. Bake at 350 F. degrees for 45 minutes. 

YIELD: 12 Servings
