MEATBALLS WITH BUTTERMILK SAUCE

1 1/2 pound ground beef

1 small onion, finely chopped

1/3 cup celery, sliced

3 Tablespoon green pepper, chopped

 1 cup rice

1 teaspoon salt

1/2 teaspoon pepper

1 egg

1 can mushroom soup

1 can buttermilk

1 ( 2 oz) can mushrooms stems and pieces

   Combine ground beef, onion, green pepper , celery, rice, salt, pepper and egg; work together until well mixed. Divide meat into 12 portions; roll each into a ball and place in a greased 2- quarts casserole. Combine mushroom soup, buttermilk and liquid from mushrooms; beat until smooth . add mushrooms; pour over meatballs. Bake at 350 F. degrees for 1 hour.

YIELD:  6 Servings
