MOCK RAVIOLI

3 large onions, chopped

 2 cloves garlic, minced

2 pound ground beef

1/3 cup plus 3 Tablespoon olive oil

1 ( 4 oz) can mushrooms

1 can tomato paste

1 can tomato sauce

1 1/2 cup water

1 1/2 teaspoon Italian herbs

1/2 cup minced parsley

1 cup soft bread crumbs

1 teaspoon sage

1 teaspoon salt

4 eggs, beaten

1 1/2 cup canned chopped spinach

1 pound butterfly macaroni, cooked

  Saute onions, half of garlic and meat in 3 Tablespoons oil; add mushrooms, tomato paste and sauce , water and herbs. Simmer 15 minutes. Combine remaining garlic and oil with parsley, bread crumbs, seasonings, eggs and spinach. Place layers of macaroni, spinach mixture and meat sauce in a casserole. Repeat layers. Bake at 350 F. degrees for 30-40 minutes.

YIELD:  14-16 Servings
