1 ( 5 pound ) hen

2 cup bread crumbs

2 1/2 cups broth

2 Tablespoon parsley

6 eggs, separated

 Salt and pepper to taste

   Cook hen in 2- quarts boiling salted water ; cool. Bone and chop into 1-inch cubes. Put skins through food chopped ; add to meat. Add crumbs, broth, parsley, beaten egg yolds and seasonings. Fold in beaten egg whites. Shape into firm loaf in greased casserole. Set in pan of water. Bake at 375 F. degrees for 1 hour. Serve with giblet gravy.

YIELD : 6 Servings
