ORIGINAL CHICKEN A LA KING

1/4 green pepper, chopped
1 cup mushrooms, thinly sliced
2 Tablespoon flour
3/4 teaspoon salt
2 cup light cream
3 cup cooked chicken, cut up
1 teaspoon onion juice
1 Tablespoon lemon juice
3 egg yolks
1/2 teaspoon paprika
1/4 cup soft butter
1/4 cup pimento, diced
Cook green pepper and mushrooms in 2 Tablespoon butter until tender. Push vegetables aside ; blend in flour and salt into butter. Gradually stir in cream ; cook until sauce thickens , stirring. Add onion and lemon juice. Blend egg yolks, paprika, and butter. Add mixture to bubbling chicken and stir to blend.; heat. Add pimento. Garnish with parsley ; serve in cheese toasted bread cups.
YIELD: 8 Servings
