PORK CHOPS WITH CURRY STUFFING

3 Tablespoon fat

1 1/4 cup apples, chopped

 1/3 cup onion, diced

1/2 cup celery, chopped

6 slices whole wheat bread, crumbled

1/2 cup milk

3/4 teaspoon curry powder

1/2 teaspoon salt

6 ( 1-inch) pork chops

1/4 cup flour

1/4 teaspoon pepper

  Melt 1 Tablespoon fat in frying pan; add appl. onion and celery. Cook over low heat until golden browned. Mix bread crumbs and milk; fold in cooked apple mixture. Sprinkle 1/2 teaspoon curry powder and 1/4 teaspoon salt over mixture; toss lightly. Cut pockets in pork chops'; stuff chops with mixture. Combine flour, 1/4 teaspoon salt, 1/4 teaspoon curry powder and pepper. Dredge chops in mixture and brown in 2 Tablespoons fat. Arrange chops in a 3 -quart casserole. Cover and bake 1 hour at 350 F. degrees. 

YIELD:  6 servings
