RICE-SAUSAGE AND ALMOND DISH

3/4 pound sausage

1/3 bunch celery, diced

 1/3 green pepper, diced

1/3 large onion, diced

 3 cup boiling water

3/4 cup rice

1 package dry chicken-noodle soup mix

1/2 teaspoon salt

buttered crumbs

 slivered almonds, toasted

   Brown sausage, crumbing with a fork, pour off all fat. Add celery, green pepper and onion to crumbled meat; saute until tender. Combine water, rice and soup mix in a greased casserole; add sausage mixture and salt. Cover and bake for 40 minutes at 350F. degrees. Remove cover; sprinkle with buttered crumbs and toasted slivered almonds and bake 20 minutes, uncovered.

YIELD: 6  Servings
