SCALLOPED CHICKEN WITH MUSHROOM SAUCE

1 medium cooked chicken, diced

2 cup soft bread crumbs

1 cup cooked rice

 1/2 cup pimento, diced

 4 eggs, beaten

1 teaspoon salt

1/2 cup melted butter or chicken fat

3 cup chicken stock

  Combine all ingredients ; pour into a ring mold. Bake 1 hour and 15 minutes at 325 F. degrees. Let stand 10 minutes; turn out on round platter.

MUSHROOM SAUCE

 4 Tablespoon fat

5 Tablespoon flour

2 cup chicken stock

Salt and pepper to taste

1 Tablespoon parsley, chopped

 1 teaspoon lemon juice

1/2 pound mushrooms, sauted

2 egg yolks, beaten

1/4 cup heavy cream

   Combine all ingredients ; cook in top of double boiler until thickened. Fill center of mold.

YIELD :  8 Servings
