SOUTH DAKOTA PHEASANT IN SOUR CREAM

1 pheasant, cut in serving pieces
1/2 cup flour
1 teaspoon salt
1/2 teaspoon pepper
Fat
1 green pepper, chopped
1 cup sour cream
Dip pheasant in flour, salt and pepper; brown in hot fat until golden. Cover and cook slowly for 30 minutes . Add green pepper and sour cream; cook over very low heat until cream is just hot.
YIELD: 4 Servings
