SWEET AND SOUR PORK

1 1/2 pound lean pork, cut in 1/2 x 2- inch strips

2 Tablespoon bacon drippings

 3/4 -1 cup pineapple juice

1/2 cup water

1/3 cup vinegar

1/4 cup brown sugar, firmly packed

2 Tablespoon cornstarch

1/2 teaspoon salt

1 Tablespoon soy sauce

1/2- 3/4 cup green pepper, thinly sliced

 1/2 cup onion, thinly sliced

1 No. 2 can pineapple chunks, drained

   Brown pork in bacon drippings in large skillet. Combine pineapple juice, water, vinegar, brown sugar, cornstarch, salt and soy sauce. Cook until clear and slightly thickened, about 2 minutes. Add sauce to pork. Cook, covered, over low heat for about 1 hour or until done. Refrigerate overnight. Reheat over low heat for 30 minutes or until steaming hot. Add green pepper, onion, pineapple chunks. Cook 2 minutes. Serve over hot rice, if desired.
