VEAL AND NOODLE CASSEROLE

1 pound lean veal

1 small onion, minced

1 teaspoon salt

2 cup noodles

2 cup milk

3 eggs, slightly beaten

1 ( 2 oz) can sliced mushrooms amd juice

2 Tablespoon pimento, minced

3 Tablespoon butter

1/2 cup cornflakes, crushed

   cut veal in 1-inch cubes; add onion and salt. Boil. in water to cover for 1 hour until tender. Remove meat; boil noodles in broth until tender. Noodles should take up all of the broth. Combine eggs, milk, meat, noodles, mushrooms and pimento. Pour into greased casserole; cover with buttered crumbs. Bake at 350 F. degrees for 1 hour.

YIELD : 6 Servings
