WILD RICE-PORK CHOP CASSEROLE

4 pork chops, 1-2 inch thick

1 green pepper , sliced

1 large onion, sliced

1 tomato, sliced

1/2 cup wild rice, rinsed

1 can consomme

1/2 cup white wine

salt and pepper to taste

  Brown pork chops ; place in a baking dish. Place slices of green pepper, tomato and onion on top of pork chops. Pour 1 cup boiling water over top of pork chops. pour 1 cup boiling water over rice; let stand 5-10 minutes. Drain and place in casserole. Combine rice, water and consomme and bring to a boil; remove from heat and wine.v Pour into casserole; cover and bake at 300 F. degrees for 1 hour 30 minutes to 2 hours.

YIELD:  4 servings
