WOODBURY CHICKEN LOAF

Submitted by Mrs. Marjorie G. Stevens from Connecticut

1 ( 4 pound ) cooked chicken, diced

2 cup fresh bread crumbs

1 cup cooked rice

1 1/2 teaspoon salt

1/8 cup chopped pimentos

3 cup milk or chicken stock

4 eggs, well beaten

   mix all ingredients, adding eggs last. Bake at 325 F. degrees for 40 minutes.

SAUCE

Butter

1/4 pound fresh mushrooms or 1/2 pound canned mushrooms

1/4 cup flour

1 pint chicken broth

1/4 cup cream

1/8 teaspoon paprika

1/2 teaspoon chopped parsley

1/2 teaspoon lemon juice

Salt to taste

  Melt butter; add mushrooms. Cook 5 minutes. Add flour and mix well. Add broth slowly, stirring constantly until thickened. Add remaining ingredients. Serve over chicken loaf. 

YIELD:  12 Servings
