BRAISED KIDNEY IN CASSEROLE

2 beef kidneys

1/4 cup  onion , chopped

1/2 -1 cup celery , chopped

2 Tablespoon margarine or other fat

1/2 teaspoon salt

Dash of pepper

2-4 Tablespoon cooking wine

Toast points

   Clean kidney, being careful to remove all white membrane and fat. If kidney has a strong odor, cover cleaned kidney with boiling water. Let stand 5 minutes ; drain. Saute onions and celery in margarine until lightly browned. Add kidney, salt , pepper and 2 Tablespoons wine or 1 Tablespoon vinegar. Place in casserole ; cover. Place in preheated oven at 350 F. degrees for 20 minutes. Add remaining cooking wine and serve with toast points. NOTE : This can be cooked in a skillet. Do not boil ; simmer.
