CORN AND BEEF SUPREME

1/4 cup onion, chopped

 1/4 cup green pepper, chopped

1 Tablespoon fat

1/4-1/2 pound dried beef, cut up

1 cup sliced mushrooms ( optional)

2 cup medium white sauce

2 egg yolks, beaten

1 teaspoon prepared mustard

Salt and pepper to taste

1 No. 2 can whole kernel corn, drained

1/2 cup sharp cheese, grated ( optional)

1/4 teaspoon paprika ( optional)

   Saute onion and green pepper in fat. Add beef and mushrooms ; fry until beef curls at edges. Combine white sauce , egg yolks and mustard ; add to beef mixture. Add salt, pepper and corn. Pour into a greased 1 1/2 quart baking dish. Sprinkle with cheese and paprika , if desired. Bake at 350 F. degrees for 30 minutes. NOTE : If desired, 1/2 teaspoon dry mustard may be substituted for prepared mustard. For variety cream-style corn may be used ; reduce white sauce to 1 -1 1/2 cups.
