DO-AHEAD DRIED BEEF CASSEROLE

3 Tablespoon onion, finely chopped

3 Tablespoon green pepper, finely chopped

2 Tablespoon butter

1 can cream of mushroom soup

1 cup milk

1 cup cheese, shredded

1 cup uncooked elbow macaroni

1/4 pound dried beef, cut in bite-size pieces

2 hard -cooked eggs, sliced

    Saute onion and green pepper in butter until straw-colored. Stir soup until creamy. Add milk, cheese, onion, green pepper , uncooked macaroni and dried beef. Fold in eggs. Pour into buttered 1 1/2 quart baking dish. Refrigerate 3 to 4 hours or overnight. Bake uncovered at 350 F. degrees for 1 hour. NOTE : Pour boiling water over dried beef and drain well before using to remove salt.

YIELD: 4-6 Servings
