FRANKFURTER-CABBAGE CASSEROLE

4 frankfurters

1 Tablespoon onion, minced

3 Tablespoon fat or salad oil

3 cup raw cabbage, shredded

1 1/2 Tablespoon flour

3/4 teaspoon prepared mustard

1/8 teaspoon pepper

3/4 teaspoon salt

1 cup milk

1 Tablespoon parsley, minced

3/4 cup cooked macaroni

1/4 cup soft bread crumbs

     Halve frankfurters lengthwise, then crosswise. Saute onion in 2 1 /2 Tablespoons fat. Add cabbage; cover and simmer 2 minutes. Add flour and seasonings. Slowly stir in milk ; cook , stirring, until thickened. Stir in frankfurters, parsley and macaroni. Pour into 1- quart casserole. Top with crumbs, combined with 1/2 Tablespoon fat. Bake in 425 F. degrees oven for 15 minutes.

YIELD : 2-3 Servings
