LIVER AND APPLE CASSEROLE

2 Tablespoon flour

Salt and pepper

1 teaspoon dry mustard

1 pound calf liver, thinly sliced

1 oz fat

2 cooking apples, peeled and sliced

2 onions , peeled and sliced

6 strips bacon, halved

1/2 pint water
     mix flour, salt, pepper and mustard ; coat liver slices with mixture. Brown lightly in heated fat. Fill a greased casserole dish with alternate layers of liver , apples and onions ; top with piece of bacon. Add water. Cover and cook in the center of a 350 F. degrees oven for 1 hour and 30 minutes, removing cover for the last 20 minutes.
