LIVER DELUXE

2 pound liver, sliced 1/4 inch thick

1/4 cup flour

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 cup salad oil

1/2 cup onion, chopped

1/4 cup green pepper, chopped

1 garlic clove, minced

3 carrots, sliced

3 stalks celery , sliced

1 pint tomato sauce

1 cup water

1 1/2 uncooked elbow macaroni

   Roll liver in mixture of flour, salt and pepper. Brown in heated oil in heavy skillet. Remove from pan and saute onion, green pepper and garlic. Add carrots, celery, tomato sauce and water. Simmer 10 minutes, Put macaroni in lightly oiled casserole. Cover with liver . Pour sauce over all. Cover and bake at 325 F. degrees for 1 hour or until liver is tender.

YIELD : 4 servings
