LOBSTER CASSEROLE SUPREME

1/2 cup butter

1 cup flour

1 1/2 teaspoon salt

8 cup milk

4 cup Cheddar cheese, shredded

5 cup lobster, chopped

2/3 cup ripe olives, chopped

1 ( 8 oz) can sliced mushrooms

8 hard -cooked eggs, sliced

   Melt butter in large saucepan ; remove from heat. Stir in flour and salt until smooth. Gradually add 7 cups of the milk, blending well. Cook and stir over low heat until thickened. Stir in 2 cups of cheese ; cook until melted. Add lobster, olives, mushrooms and hard- cooked eggs. Place mixture in a 2-quart casserole dish. Add remaining 1 cup milk to biscuit mix. Roll dough 1/4-inch thick. Cover with remaining 2 cups cheese. Roll dough as for a jelly roll . Cut into 1/2 -inch slices. Cover lobster mixture with biscuits. Bake at 425 F. degrees for 15 minutes or until biscuits are browned.
