POTATO- LIVER CASSEROLE

5 slices bacon
1 1/2 pounds beef liver
1/4 cup flour
1 large onion, sliced
2 cup celery, diced
1 green pepper, diced
1 cup tomatoes
1 teaspoon salt
1/8 teaspoon black pepper
2 pound small new potatoes, scraped
3/4 cup hot water
Pan broil bacon in heavy skillet. Remove from pan and brown liver that has been dredged in flour. Move liver to one side of pan. Saute onion, celery and green pepper until soft. Add remaining flour and stir until smooth. Add tomatoes, salt and pepper. Cook until thickened and smooth. Add the potatoes. Cover tightly and bake 45 minutes at 350 F. degrees or until potatoes are soft. Remove lid ; arrange bacon. Reheat for 5 minutes.
YIELD : 5 Servings
