STUFFED LOBSTER SUPREME

8 rock lobster tails

9 Tablespoon butter

4 Tablespoon flour

1 teaspoon salt

1 teaspoon paprika

Few grains of cayenne pepper

2 cup light cream

2 Tablespoon lemon juice

1/4 cup cracker crumbs

1/4 cup Parmesan cheese

   Cook lobster in boiling salted water ; drain. With scissors cut meat away and dice ; save shells. Saute lobster meat in 8 Tablespoons butter 2 or 3 minutes ; blend in flour, salt, paprika, cayenne. Slowly stir in cream ; cook until mixture thickens and boils 1 minute. Stir in lemon juice. Spoon filling into lobster shells; sprinkle lightly with mixture of cracker crumbs, cheese and 1 Tablespoon butter. Bake in shallow pan at 450 F. degrees for 12 minutes.

YIELD: 8 Servings
