VEGETABLE-BEEF CASSEROLE

6 cup water

1 Tablespoon salt

3/4 cup uncooked rice

1/2 cup onions, chopped

1/2 cup green peppers, chopped

 2 Tablespoon fat

5 oz dried beef, cut up

1 small can whole-kernel corn

4 oz mushrooms ,sliced

1 can cream of vegetable soup

Seasoning to taste

1/2 cup milk

1/2 cup American cheese, grated

3 Tablespoon Italian cheese, grated

   Heat 6 cups of water until it comes to a boil/ Add salt and rice and cook until tender. Saute onions and green pepper in fat until tender. Add beef and continue to saute until edges turn up/ Remove from heat and add corn , mushrooms, soup and milk. Blend all ingredients except cheeses until evenly spread throughout. Pour into greased 1 1/2 quart baking dish. Blend cheeses and sprinkle over top. Bake at 350 F. degrees for 30 minutes.

YIELD: 6-8 Servings
