Piccalilli
Its the end of the summer growing season and you have tons of green tomatoes and don't know what to do with them...This recipe I remember my Great Grandma and grandma making with those tomatoes.
What will you need:
A big stock pot or a big bowl
4 quarts chopped, peeled, cored green tomatoes ( or just put in food processor and chop up)
2 quarts chopped cabbage ( my grandma's always grated theirs)
2 cups chopped sweet peppers
1 cup chopped onion
1/2 cup canning salt
1 1/2 cup brown sugar
2 Tablespoons mustard seed
1 Tablespoon celery seed
1 Tablespoon prepared horseradish ( I left this out)
4 1/2 cup vinegar
Now lets make it:
Combine vegetables in a large bowl. Sprinkle salt over vegetables and mix thoroughly; let stand 3-4 hours. Drain ;rinse and drain thoroughly. Combine sugar, spices and vinegar in a large stock pot. Simmer 15 minutes. Add vegetables and bring to a boil. Pack hot relish into hot jars, leaving 1/4 inch headspace. Remove air bubbles. Adjust 2 piece caps. Process 10 minutes in a boiling water bath canner.
Then you can enjoy this recipe just like you do with any relish...I did add a jalepeno to it this time.
